Although service can be inconsistent (initial attention from the wait staff can dwindle by dessert and plates might even rest empty for 45 minutes), the food is technically excellent and refreshingly unfussy. A buttery foie gras torchon comes with evanescent Muscat gelée; rare slices of duck breast sport a nice salt crust; scoops of pistachio ice cream and apricot sorbet atop honeyed meringue make for a pleasantly chewy vacherin.
